For 17 years, the agricultural operation in Mörsbach, between Hachenburg and Wissen, has been family-owned. Initially intended as a horse boarding facility, the first cattle for personal use soon arrived. Over the years, the once small herd of cattle, consisting of two mother cows and one bull, grew to around 50 animals. The choice of the Galloway breed was not difficult, as they provide excellent meat and are known to be robust and undemanding. Furthermore, Florian Assenmacher wanted a breed of cattle that is not commonly found everywhere.

In addition to cattle farming, around 80 hectares of grassland are cultivated. The animals live outdoors in nature year-round and are kept in open housing. They live according to their natural behaviors in groups and have plenty of movement on certified organic pastures.

In order to spare the animals the sometimes stressful transport to the slaughterhouse, Florian Assenmacher decided to build his own slaughterhouse on the farm. Two cold storage facilities complement the slaughterhouse, where the meat can mature for about three weeks. This is a crucial factor for quality and taste. 

Typically, customers interested in high-quality organic beef contact Florian Assenmacher directly or check the homepage for the next scheduled slaughter date. Once sufficient demand has been gathered, the slaughtering takes place, and the meat is marketed in packages of approximately 12 kg or 22 kg.
